Spring Carrot Salad

  • 4-6 peeled carrots
  • 2 tablespoons of sheep or goat cheese our favorite it Meredith Dairy
  • a handful of chopped fresh mint
  • pinch of sea salt and fresh ground pepper to taste
  • 1/2 cup of chopped pistachios
  • EVOO
  • juice of 1/4-1/2 a lemon

Ribbon peel clean peeled full size carrots into a bowl. Chop and add fresh mint and goat cheese in with the carrots. Shell pistachios and place in a cloth produce bag. Use the flat side of a meat tenderizer to break up the pistachios and add them to the bowl. Dress with salt, pepper olive oil and a squeeze of fresh lemon juice. Toss and serve.
